On our first trip to try this experience, we made the 2-hour drive across the state to arrive 30 minutes before the park opened at 8am. The ancient history of the Mayaca people, who lived in the area for over 6,000 years, offers true historic significance. But the story we’re looking for begins when the park was a small piece of the 2,000-acre Spring Garden Plantation. During periods of high visitation, visitors may experience long lines to enter De Leon Springs State Park.

De Leon State Park offers a 50-minute Eco/Heritage tour for a reasonable fee. This tour focuses much time on the 6,000 years the Mayaca Indians lived in the area they called Acuera or “Healing Water”. This experience has a cult following locally and among visiting snowbirds. “I’ve seen the wait as long as four and a half hours,” said General Manager Sparkle Rex.

Today, it stands as a testament to the state’s rich heritage, serving up not just meals but also a slice of Florida’s history. Each table comes equipped with a built-in griddle, inviting diners to become chefs in their own right. “We’ve been considering different toppings and new pancake flavors for a flavor of the month. Eventually, we want to incorporate lunch items into the griddle experience as well,” revealed Rex. There are also highlights about Queenie, the water-skiing elephant.

Guest Services Inc. won the contract and said it is continuing the tradition of make-your-own pancakes, but made several upgrades, including structural improvements and a new roof. Only, the instruments are spatulas, and the music is the sizzle of batter turning into golden, fluffy circles of joy. With a griddle that’s hot and ready right in front of you, it’s like you’re the conductor of a symphony. Imagine crafting your own stack of pancakes, flipping them to golden perfection, and then dressing them with an array of toppings.

Kids will enjoy the touch table highlighting bones and shells of local wildlife and a children’s area. If you would prefer to explore the waters under your own power, you can bring a kayak or canoe or rent one at the park. It’s a great way to discover Spring Garden Lake and the creek with a leisurely paddle. The line of cars waiting to enter the park was already 30 cars deep. After finally making it inside the park, we walked to the Mill to find the wait for a table was already 2 hours long.

Closures occur intermittently and for an unknown duration of time. Pedestrians and bicyclists will not be allowed to enter until the park reopens. Long considered one of the best pancakes in town, the incredible griddle produces some of the crispiest, fluffiest pancakes you’ve ever tried.
